50% Mavro + 50% Xynisteri
Commandaria is the wine produced from the Cyprus grape varieties Mavro and Xynisteri under controlled conditions and in the confined viticulture area of Commandaria in Limassol district. (Appellation of Origin).
Production Details
Grapes with a high sugar content are selected (high degree baume) and specifically, Xynisteri at around 12 baume and Mavro at 15-16 baume. After selection, the grapes are spread out in the sun so that through evaporation the sugar density is increased and the grapes reach 19 to 23 baume. Consequently, the grapes are taken to the winery where they undergo crushing, pressing and juice extraction. The fermentation takes place in reservoir and lasts until it ceases on its own accord, due to the fact that it had already began with high sugar content. The maturity of commandaria is carried out in oak barrels for a period of not less than three years. Characteristic bouquet is formed in three technological stages: a) During the drying process, b) during the fermentation which proceeds very slowly because of the sugar high content, c) during ageing which may be not less than three years.

Packing
The wine is bottled in 0.75 L or 1L special bottles and packed in cartons of 6 bottles.
